Hey, there-how you are you holding up during this whole pandemic thing? For me, finding some sort of routine has been crucial. Operating my life as if it was “normal”-waking up early to work out, shower, put on actual clothes, and cook to name a few. Now, let’s be clear. There have also been days where I don’t get out of bed until nine, refuse to shower and work from the sofa in my PJ’s all day.
One part of my routine has been this salad I’m titling “Quarantine Salad.” I wish that I could say I had some huge recipe inspiration for it, but the reality is that the salad is full of YUMMY and healthy ingredients that I stocked up on at Costco. This salad is something I’ve eaten over and over and haven’t gotten sick of (yet). Perhaps you can use this recipe as inspiration for your own version of a quarantine salad-finding all the healthy ingredients you can and throwing it in one big bowl! Enjoy!
2 cups of greens (I did 1 cup of arugula and 1 cup of spinach)
1 cup of brussels sprouts, chopped finely
¼ cup of walnut, chopped
⅓ cup of goat cheese, crumbled
½ avocado, cut into small piece
1 serving of lean protein (I like chicken breast, thighs, salmon, or an organic sausage)
- Make salad dressing and set aside
- Cut dates into small, round pieces, and set aside. Chop and prepare brussels, walnuts, cheese, avocado, and protein
- Add greens and all ingredients into a large bowl
- Toss with salad dressing, about 2-3 tbsp. worth
