Chia Seed Pudding

When I leave teaching to head to tutoring client to then head to meet with a nutrition client I work up quite an appetite! Lately, I've been eating this chia seed pudding for a snack, not spider eggs as one of my first graders thought...The best part is this snack takes maybe 2 minutes to prepare. I'm also loving it as a dessert when I am craving some after dinner...but do not want a ton of sugar. It is absolutely delicious (and satisfying!)   with some fresh berries, almond butter, and nut milk on top!

Chia Seed Pudding

INGREDIENTS

2 cups of nut milk (Try my recipe here)

1 cup of chia seeds

1/4 tsp. of cinnamon

1 tsp. of vanilla extract

Optional Toppings:

1 tbsp. of honey

1  tbsp. of almond butter

Fresh berries

INSTRUCTIONS

1. Place chia seeds in a bowl

2. Add ingredients in the order listed into the bowl and mix

3. Do not fill all the way to the top in order to leave room for expansion  

4. Cover, and place in the refrigerator for several hours or overnight
