Last weekend, we went up to Buffalo Pass near Steamboat Springs. The views were breathtaking! We had so much fun hanging out by the fire and eating delicious food. Huck had a great time camping too!

After years of camping and a few years being mostly Paleo, I’ve finally narrowed in on my favorite (and easiest!) Paleo camping foods and tips.

1. Pre-cut all your vegetables!

This saves SO much time. I can’t tell you how many times I’ve arrived in the dark to then cut an onion in the dirt. NOT FUN! Before we left for this trip, I spent the night before pre-cutting my onion, garlic, sweet potato, etc. This makes for a simple meal preparation-all you really have to do is just cook the food since you’ve taken the prep work out of it!

I also pre-cut fresh herbs like parsley, chives and green onion that packs flavor to any dish!

2. Purchase pre-cooked/cut meat and vegetables.

I bought some pre-grilled organic chicken breast strips from Whole Foods. This was WAY easier than cooking the meat. Plus, we only have one cast-iron skillet for camping, so having the meat already finished was helpful. All I had to do was heat it up!

I cut most of my vegetables, but you can also purchase tons of pre-cut vegetables if you are really looking to save time. They can be relatively cheap too-the peppers you see pictured was about $4.

3. Choose one-skillet meals.

Again, this makes things EASY! We did two nights of Mexican-first night, we made chicken and vegetable tacos, the next night we made a taco salad with organic ground beef.

For the chicken tacos, I started by heating 1-2 tbsp. of olive oil. We have a separate bin of solely camping oils and spices. Again, time saver!

I then added the peppers and since my chicken was pre-cooked, I added that at the end to heat it up. We grilled our tortillas (I used grain-free Siete) on the open flame.

The next night we did the same thing, except put the raw ground beef in the pan first.

I followed similar steps for breakfast both mornings. I cooked our bacon, emptied most of the grease, set the cooked bacon aside, and then added sweet potato in the bacon grease. If making a similar scramble, be sure to cook the sweet potatoes FIRST. They are a hard starchy vegetable that takes time. Once the sweet potatoes start to become soft, add in the onion, garlic and sauté for another 3-5 minutes.

Then, add in the desired amount of eggs, herbs, and spices.

4. Bring a Mason Jar of non-dairy milk.

Okay, I guess I can suck down a cup of black coffee…but just because you’re camping does not mean you have to sacrifice your quality coffee! I love putting coconut or almond milk in a jar in order to have delicious coffee each morning. This will save space in your cooler as well in comparison to a large container.

5. Pack your camping bag with self-care items you love

I adore being in the great outdoors! That does not mean I will or need to skimp on my favorite self-care items!

I find being in nature incredibly relaxing, so I love bringing along with things that will help me feel extra relaxed or taken care of! Here are some of my favorite items I love to bring along on a camping trip:

-Face wipes- great to get that dirt off your face, hands, nails, etc.

-Sheet Face Mask

-Rose water-amazing to spray on your face first thing when you wake up!

-Sleeping mask-that sun will wake you up EARLY!

-Sample size perfume bottle

-My DSLR camera, a book, journal, or anything that spark creativity
