Paleo Chicken Salad

It has been hot hot hot in Denver! Thank goodness, after our winter I say bring on the heat. While I love warm summer nights and hot days, I'm not a fan of hot food during the summer when I need to cool down! Enter-Paleo Chicken Salad as the perfect summer meal.

I spoke at Just Be Kitchen in Denver for an Intuitive Eating workshop last week. One of the tips I shared with my guests for eating intuitively is to eat seasonally. Eating seasonally helps us get in tune with the world around us.

I also find if we slow down and listen to our bodies, our bodies will tell us exactly what we need! Cravings are not always a bad thing...in fact, they can be incredibly helpful for what we need! I was craving a healthy high protein lunch, but a hot chicken breast when it's 95 degrees sounded so...blah...  

The best part about my Paleo Chicken Salad is that it is super easy to make and you'll have lunch leftovers for days to come. Don't skip out on my homemade Garlic and Herb Paleo Aioli-that's what gives the chicken salad a yummy and unique flavor!

Paleo Chicken Salad

INGREDIENTS

2 organic chicken breasts

Garlic and Herb Paleo Aioli (or any other Paleo mayonnaise)

1/2 cup of diced celery (about 4 stalks)

Fresh parsley, chives, green onion (optional)

INSTRUCTIONS

  1. Boil a large pot of water with a pinch of salt. Add chicken breasts once the water boils and cook for about 10 minutes, or until no longer pink on the inside

  2. Let the chicken cool. Add chicken to a stand mixer and shred. Alternatively, cut the chicken into small cubes.

  3. Dice the celery

  4. Combine chicken, celery, and aioli into a large bowl. Sprinkle with fresh herbs if desired. Mix until well combined. Refrigerate and enjoy!
