Grapefruit and Avocado Salad

Not only are grapefruits in season, but are beneficial for your immune system, high in nutrients, and can boost your metabolism. ⁠I added fresh grapefruit with avocado, pumpkin seeds, parsley, and red onion. Top this salad with goat cheese and your protein of choice if you so desire!

INGREDIENTS

-2 cups of fresh arugula

-1/4 cup of diced red onion

-1/2 of avocado, cut into small cubes

-1/2 grapefruit, cut into small cubes

-1/4 cup of pumpkin seeds

-1/4 cup of goat cheese

-1/8 cup of fresh parsley, minced

For the Dressing:

-1/8 cup of extra virgin olive oil

-1/8 cup of balsamic vinegar

-Juice of 1/2 a lemon

-Pinch of salt and pepper

INSTRUCTIONS

  1. Mix dressing in a small bowl, set aside.

  2. Add arugula, onion, parsley, pumpkin seeds, avocado, and grapefruit into a large mixing bowl. Top with goat cheese.

  3. Dress salad as desired. Mix and serve. Make two smalls salads, or one large.
